All flat panel displays and projectors contain a part called a 'scalar'. It's main purpose is to convert the signal from the source which creates the display resolution. If the display's resolution is 768 x 1336 then a native fed DVD would be upscaled to 768 x 1366 and deinterlaced. 720p would see some small scaling but no deinterlacing as the source isn't deinterlaced.

To get the best out of upscaling you should select the output that produces the best results. Upscaling DVD players let you choose the output resolution; SD, 720p, 1080i and some newer models offer 1080p. So you should play a DVD and trying all the resolutions and see which one gives the best picture for you.
